  • 16 oz beyond sausages
  • 12½ oz jumbo pasta shells
  • 1 tbsp olive oil
  • 30 oz spaghetti sauce
  • 2 vegan eggs
  • 15 oz vegan ricotta cheese
  • 4 cups vegetarian mozzarella
  • 1 cup vegan Parmesan cheese
  • ¼ bunch basil
  • ½ tsp black pepper
  • 1 cup spinach
  • 1 cup onion
  • 2 tbsp parsley

  • 1 knife
  • 1 grater
  • 1 skillet
  • 1 wooden spoon
  • 1 saucepan
  • 1 bowl
  • 1 baking dish
  • 1 oven
  • 1 foil


Chop basil and spinach. Then, peel and slice onions.

Shred vegetarian mozzarella and vegan parmesan cheese with a grater.

Chop parsley.

Heat a skillet, add beyond sausages and cook for 3 minutes.

Crumble the sausages with a wooden spoon.

Cook for 5 minutes, stirring continuously to get cooked crumbled beyond sausages, then turn off the heat.

Heat a saucepan at medium temperature. Add 4 cups of water and jumbo pasta shells to the saucepan. Boil for 9 minutes, then turn off the heat to get cooked jumbo pasta shells.

Drain cooked jumbo pasta shells in a colander.

Combine vegan eggs and vegan ricotta cheese in a bowl. Stir in basil, onions, spinach, and black pepper in the bowl. Add 1 cup of vegetarian mozzarella, half a cup of vegan parmesan cheese, and cooked crumbled beyond sausages. Mix everything together with a wooden spoon to get a sausage mixture.

Preheat the oven to 350°F for 12-15 minutes.

Add olive oil to a baking dish, then pour 24 oz of spaghetti sauce into it.

Stuff the pasta shells with the sausage mixture and spread it in the baking dish.

Pour the rest of the spaghetti sauce over the pasta, cover it with foil, and bake for 30 minutes. Take the baking dish out of the oven, remove the foil, and add 2 cups of vegetarian mozzarella cheese and half a cup of vegan parmesan cheese. Next, return the baking dish to the oven and bake for 5 minutes. Then, turn off the heat and remove the baking dish from the oven.

Sprinkle chopped parsley over beyond sausage stuffed pasta shells.
