INGREDIENTS

  • 1 cup rolled oats
  • 1 cup all-purpose flour
  • ½ tsp baking soda
  • 1 tsp baking powder
  • ⅓ cup butter
  • 1 egg
  • 1 cup buttermilk
  • 1 tsp salt
  • ½ cup granulated sugar
  • ½ oz cooking spray

  • 1 mixing bowl
  • 1 muffin tin
  • 1 spoon
  • 1 oven
  • 1 whisk
  • 1 electric mixer
  • 1 spatula

STEPS

Put the rolled oats and buttermilk in a bowl and mix with a spoon. Set aside for 60 minutes to get a rolled oats mixture.


Put the all-purpose flour, baking soda, baking powder, and salt in a second bowl. Whisk to get a dry mixture.


Put the butter and granulated sugar in a mixing bowl. Mix with an electric mixer for 2 minutes. Then crack the egg into the mixing bowl and mix again with an electric mixer. Add the dry mixture and mix with a spatula for 2 minutes. Then add the rolled oats mixture and mix again with a spatula to get a batter.


Spray a muffin tin with cooking spray. Pour the batter into the muffin tin (2/3 full).


Preheat the oven to 400°F for 17 minutes.


Place the muffin tin in a hot oven and bake for 20 minutes. Then turn off the heat and remove from the oven.
