INGREDIENTS

  • 2 eggs
  • 1 cup low-fat milk
  • ½ cup canola oil
  • ¼ cup molasses
  • ¾ cup brown sugar
  • ½ tsp vanilla extract
  • 1½ cups wheat bran
  • 1½ cups all-purpose flour
  • 2 tsp baking powder
  • ¾ tsp salt
  • ½ tsp baking soda
  • 1 cup raisins

  • 1 whisk
  • 1 wooden spoon
  • 12 paper muffin liners

STEPS

Crack the eggs into a bowl. Then add the low-fat milk, canola oil, molasses, brown sugar, and vanilla extract. Whisk for 2 minutes. Then add the wheat bran and whisk for another 2 minutes. Set aside for 5 minutes to get a creamy mixture.


Put the all-purpose flour, baking powder, salt, and baking soda in a second bowl. Mix with a spoon to get a dry mixture.


Add the dry mixture to the creamy mixture and whisk. Then add the raisins and stir with a wooden spoon to get a batter.


Preheat the oven to 400°F for 17 minutes.


Place the paper muffin liners in a muffin pan. Fill each mold with the batter (2/3 full). Place in a hot oven and bake for 20 minutes. Then turn off the heat and remove from the oven.
