INGREDIENTS

  • ¼ cup salt
  • 4 lbs watermelon rind
  • 2 cups vinegar
  • 4 cups granulated sugar
  • 3 sticks cinnamon
  • 1 tsp cloves
  • 1 tsp allspice
  • 1 lemon

  • 1 bowl
  • 1 sterilized jar
  • 1 spoon
  • 1 colander
  • 1 saucepan
  • 1 wooden spoon
  • 1 lid

STEPS

Cut a lemon thinly, then chop watermelon rind into cubes.


Combine a quarter cup of salt and 4 cups of water in a bowl with a spoon to get a brine.


Soak cubed watermelon rind in brine for 30 minutes and drain it in a colander.


Combine vinegar, granulated sugar, cinnamon, cloves, allspice, and sliced lemon in a saucepan with a wooden spoon for 2 minutes. Cook for 5 minutes, then add drained watermelon rind and stir again. Cook for 30 minutes and turn off the heat to get pickles.


Put pickles in a sterilized jar and cover it with a lid.


It’s ready to be served !
