- 7 oz feta cheese
- 1 onion
- 7 oz spinach
- ½ cup breadcrumbs
- 2 eggs
- 1 tbsp lemon
- 2 tbsp pine nuts
- 1 tbsp spearmint
- ½ tsp dried dill
- 2 sheet puff pastry
- 2 tbsp whole milk
- 1 knife
- 1 wooden spoon
- 1 oven
- 1 kitchen paper
- 1 hand blender

- 1 squeezer
- 1 baking tray
- 1 brush

- 1 frying pan
Crumble feta cheese with a fork.
Peel and chop an onion.
Squeeze spinach with kitchen paper to get dried spinach.
Cut lemon in half.
Squeeze lemon with a squeezer.
Preheat the oven to 200°F for 12-15 minutes.
Heat the frying pan, add pine nuts and stir with a wooden spoon. Cook for 3 minutes to get toasted pine nuts.
Crack eggs in a bowl and beat them with a hand blender. Then, add milk and beat again to get an egg wash mixture.
Combine chopped onion, dried spinach, lemon juice, crumbled feta cheese, spearmint, dried dill, breadcrumbs, beaten eggs, and toasted pine nuts in a bowl with a wooden spoon. Season with a quarter tsp of salt and a quarter tsp of black pepper.

Cut puff pastry roll into three pieces.
Fill sheets of puff pastry with the spinach mixture and roll them.
Put the pastry rolls on a baking tray.
Dip a brush in egg wash mixture and brush the pastry rolls.
Put the baking tray in the oven and bake for 20 minutes.
Take the baking tray out of the oven to get cheese and spinach rolls.
