INGREDIENTS

  • 3 cups bread flour
  • 1 cup whole grain wheat flour
  • 2½ tsp active dry yeast
  • 1¼ tsp salt
  • 1 pinch granulated sugar
  • 1 tbsp cornmeal

TOOLS

  • 1 heavy sheet pan
  • 1 cup
  • 1 mixing bowl
  • 1 parchment
  • 1 oven
  • 1 spoon
  • 1 wooden spoon
  • 1 clean towel

STEPS

Put parchment in a heavy sheet pan and sprinkle cornmeal over it.


Combine active dry yeast with a third cup of water (110°F) in a cup. Mix with a spoon to get a yeast mixture.


Put bread flour in a mixing bowl. Mix in whole grain wheat flour, salt, granulated sugar, and yeast mixture with a wooden spoon to get a dough.


Knead dough for 10 minutes.


Put the dough in a mixing bowl and cover with a clean towel. Set it aside for 60 minutes, then remove the towel.


Punch the dough and set it aside for 60 minutes.


Transfer the dough to a heavy sheet pan and cover it with a clean towel. Then, set it aside for 40 minutes.


Preheat the oven to 435°F for 12-15 minutes.


Remove the towel from the heavy sheet pan, then put it in the oven and bake for 30 minutes.
